Mileta is a modern, scratch kitchen in Lexington, KY, serving handmade pastas, seasonal dishes, craft cocktails, and a carefully chosen wine list. Led by Managing Partner Dallas Rose and Executive Chef Alex Green, we focus on quality ingredients, thoughtful cooking, and warm, genuine hospitality.

-Dallas Rose-
Dallas Rose is the Proprietor and Managing Partner at Mileta, a new restaurant in Lexington, KY offering contemporary Italian-inspired cuisine with worldly influences. Born and raised in Lexington, KY, Rose got his passion for food from his mother. His extensive family tree, including Serbian, Italian, Greek, and Kentuckian backgrounds, exposed him to various cuisines and cultures throughout his childhood. At fourteen, Rose started his first restaurant job washing dishes at Ramsey’s Diner in Lexington. Since then, Rose worked in numerous roles ranging from line cook, bartender, and server throughout college and graduate school. Rose attended the University of Kentucky and received his Bachelor of Business Administration (BBA) in Finance. During this time, Rose opened his first restaurant at just 21 years old, a burger joint named Bunk’s Burger Bar, located on the university’s campus. After leaving the business to pursue a career in finance and attending the Owen Graduate School of Management at Vanderbilt University, earning a Master of Science in Finance, Rose felt pulled to the food and beverage industry and started his journey back to his one true passion. Following graduate school, Rose started working as an analyst at Goldman Sachs before assuming the role of Vice President for six years. After seven years at Goldman Sachs, Rose began working as the Director of Acquisitions for Marlin Spring, a privately owned real estate firm, in January 2020. After four years with the company, Rose branched off in January 2024 and founded Jade Investments, a real estate private equity firm investing in multifamily and industrial assets nationwide. Alongside his investment business, Rose stayed true to his love for the restaurant space and kickstarted the team at Mileta, a love letter to the Lexington community where he spent most of his life. In this role as Proprietor and Managing Partner, Rose oversees the design and build of the restaurant, managing all aspects of the business to foster a dedicated team of hospitality professionals to execute a top-tier dining experience in Kentucky. He enjoys facing multiple new challenges daily and learning from the various personalities he encounters. Rose’s fulfillment comes from exceeding people’s expectations and ensuring they leave the restaurant happy and satisfied. Rose currently resides in Lexington, KY. When not at work, he enjoys cooking and entertaining for friends and family and spending time with his wife, Courtney, his four children, Bronson, Dahlia, Mila, and Wolfgang, and his two silver labradors, Franco and Lucia.

-Alex Green-
Alex Green is the Executive Chef and Partner at Mileta in Lexington. A Kentucky native, Green discovered his passion for cooking early, spending time in the kitchen with his family before turning that curiosity into a career.
He holds a Bachelor of Science in Nutrition-Food Management from Murray State University, where he was later named a Top 22 Under 40 Alumni, and graduated with honors from the prestigious Culinary Institute of America in New York. His career has taken him across the country, including opening Josephine Estelle in New Orleans, serving as Chef de Cuisine at Hog & Hominy in Memphis, and leading large culinary operations in healthcare and higher education.
At Mileta, Green oversees the creative direction of the kitchen and menu development and kitchen operations. His cooking is ingredient-driven, seasonal, and rooted in technique. As a chef and co-founder, he is committed to building a restaurant that feels both intentional and welcoming.
Chef Alex lives in Lexington with his wife, Marli, and their three cats, Louie, Roux, and Koji. Outside the kitchen, he enjoys making pottery, restoring vintage chef’s knives, Formula 1 racing, and shaking up cocktails.
Mileta FAQ
Q: What are your hours?
A: Mileta is open Wednesday through Sunday for lunch from 11am-2pm, Happy hour from 2pm-5pm, and dinner service from 5pm-9pm. The bar is open until midnight on Friday and Saturday.
Q: Do I need a reservation?
A: Our 24-seat bar and 16-seat lounge are first-come, first-served. If you would like a table in the dining room, reservations are highly encouraged and available via Tock. For parties larger than 8, please call the restaurant directly.
Q: Is Mileta an Italian restaurant?
A: Not exactly. Mileta is a contemporary restaurant with global influences. While handmade pasta is a cornerstone of our menu and Italy is one source of inspiration, our cooking draws from many cuisines and techniques. We focus on seasonal, locally sourced ingredients and make everything in-house daily with care and intention. You won’t find classic Italian or Italian-American dishes here, but you will find thoughtful, ingredient-driven food meant to be enjoyed.
Q: Do you accommodate kids?
A: Mileta welcomes all people. However, due to the nature of our dining room seating, we are unable to accommodate highchairs and strollers. Mileta does not have a separate children’s menu but we do offer a number of simple appetizers and pastas on the menu that will please even the pickiest palates.
Q: How do I book the Pasta Room?
A: To book the Pasta Room, or for any other private party inquiries, please call the restaurant directly.
Q: What is the music / vibe like?
A: We throw a dinner party every night. The lighting is moody, and the music is a mix of soul, R&B, old-school hip-hop, disco, and more.
